US researchers suggest that the addition of salt can enhance the quality of a cup of tea.

US scientists have recommended adding salt to make the perfect cup of tea. Prof Michelle Francl, a chemistry professor at Bryn Mawr College, claims that adding salt blocks the receptor that makes tea taste bitter. She recommends using loose leaves, giving the drink a constant stir, adding a small squeeze of lemon juice, and using short, stout mugs to keep the tea hotter. She advises against microwaving tea. In her book Steeped: The Chemistry of Tea, she urges tea lovers to have an open mind and experiment.
